A gentle wisp of a sweet, floral, perfumey scent greeted the Panel. That was followed by a café au lait frappé, honeyed granola in full-fat milk and a freshly squeezed mango juice. On the palate, we found thick, rich pastry cream, vanilla macaroons and gorse flower custard, plus strawberry and coconut sorbet banana tuiles with a few rose petals sprinkled on top – pure pleasure. Just a drop of water, if you wish, and the delicate, exotic, fruity sweetness of mango, papaya, and pineapple and peach pie fudge emerged. To taste, the merrymaking began with a glass of white wine lychee sangria.
