This silken dram will ease palates into the evening ahead and gracefully pair with several appetizers from soups and broths to assorted pies. Our next course is a very important one, this “great chieftain o’ the puddin’ race”. Haggis is the culinary star of the evening and may be paired with a variety of flavour profiles. For our supper, we choose Cask 9.150 Thyme well spent. This deep, rich and dried fruits cask will serve to balance out the peppery spice of the dish with a combination of dark confection, herbal and earthy accents and cabinet spice. Once the food is finished and the poetry resumes, open Cask 29.250 Peat fire flame for some liquid poetry from Islay. A beautiful confluence of sea, smoke and spice will soothe the soul and make for a proper finish as a hearty rendition of Auld Lang Syne completes the evening.
