We sat on the wooden pier as we poured this dram, the colour dark and menacing like the storm clouds over Mull slowly moving towards us. On the palate the wind picked up and the sea was getting rougher. White-crested waves frothing with foam, ‘seahorses’ in old seafarers’ lore, crashed against the sea wall as we headed for cover to enjoy venison stew with bacon ’n’ cheese-stuffed potatoes. After reduction, we discovered barbecued prawns and pork ribs seasoned with aged balsamic salt, an infusion of sea salt with naturally sweet balsamic vinegar steeped in delicate herbs. Following 10 years in an ex-bourbon hogshead, we transferred this whisky into a first fill Spanish oak oloroso hogshead.
