The aroma conjured up many memories and pictures – strolling by the sea on a pebble beach with a strong salty breeze, or granite cliffs meeting Atlantic waves, but also strawberry tartlets, blancmange and a sweet, floral, summery perfume. To taste, we chowed on chargrilled lobster alongside oysters with a dash of shallot vinegar and lemon. The addition of water brought a sea change; the scent was now of toffee, polished oak and smoked haddock. On the palate, we served up a bowlful of tuna caesar salad with anchovies and cavolo nero, and a Cornish shortcrust stargazey pie. Following five years in an ex-bourbon hogshead, we transferred this whisky into a second fill PX hogshead.
