We all started limin, possible after a couple of glasses of sweet ‘red red wine’ like a Tintilla de Rota with that fascinating aroma of old roses combined with cigar boxes and a whiff of camphor. The taste neat had that funky feel-good factor of tropical fruits, coconut and barbequed jerk chicken – it might stir it up but we loved it. Diluted, a petrol aroma emerged at first but that soon faded away making room for sweet cured meat and rum soaked dark cherries whilst on the palate a plum, halloumi, red onion and rosemary kebab with a tarry finish emerged. After fourteen years in an ex-bourbon barrel this whisky was transferred into a refill barrel used to mature Jamaican rum.
