A joyous amalgamation of raspberries, fudge and shortbread merged with cinnamon butter melting over toasted oak and warm hazelnuts, finished with a drizzle of honey and rapeseed oil. The palate did not disappoint as toffee, butterscotch and cherry syrup mixed with marzipan on fruitcake packed with sultanas, ginger and nutmeg. Water brought a noticeable change as lemon icing and wild flowers joined cut grass and pine needles. Grippy tannins now delivered a firm backbone of tree bark and oak as tart cherries mingled with dry spice and cold brewed coffee. Five years in an ex-bourbon barrel before being transferred to a Spanish oak first fill oloroso hogshead.
