Crouching in a peat bog

Our initial impressions were of warmth, density and meatiness. Lots of black pepper, smoked game meats, biltong, waxed canvas and BBQ embers. Beyond that we found wintergreen, cough mixtures, smoked chipotle chilli and black olives. Water brought softer notes of smoked olive oil, wormwood, motor oil, old toolboxes, metal polish and a sweet threat of peat smoke. The mouth initially showed surgical mouthwash, aniseed distillate, natural tar, medical embrocations, herbal ointments, horseradish, charred red meats and black coffee. Reduction added new leather, dunnage earthiness, BBQ sauce, spicy pulled pork, herbal cough syrups and cocktail bitters.
