Big, bold and beautifully sweet, this was like a sticky toffee pudding that has been set on fire with high-proof aged rum from Dominica in the Caribbean. On the palate, we delved into dark chocolate cupcakes with raisins coming from grapes that have soaked up the sun in Andalucía. After reduction we discovered more alcohol-infused goodness, with a Jamaican coffee liqueur chocolate mousse and brandied maraschino cherries. To taste, we were back in the Caribbean enjoying a rum and cola, also known as cuba libre, with a slice of lime and a bowl of crunchy honey-roasted almonds. Following 12 years in an ex-bourbon hogshead, we transferred this whisky into a first fill ex-bodega PX barrique.
