Salmon in a rabbit hutch
Speyside, Spey
The panel appeared to have entered a paint cupboard upon first nosing. We found well-used paint brushes, turpentine and then a dive towards fresh garden fruits such as green apples and pears. Before a sidestep into lime chewits and bubblegum. With time it became earthier and showed notes of lemon blossom and charred pineapple. Water brought out a grassier edge with gooseberry curd, wine gums, green wood and pears baked in calvados. The palate was all sweetness and spices. Citrus rind, orange blossom, cinnamon powder, clove rock and strawberry foam all appeared. Notes of fresh straw suggested a well kept rabbit hutch. With water we found gingery notes, honeyed oatmeal, white pepper, light wax and buttery crumpet succulence.
