Cask Variations showcases two very different sides of our "Spicy & Sweet" flavour profile resulting from different cask maturations. It’s April in Seville with Cask No. 39.230 Days of spring as herbs, flowers, fruit blossoms and chili spices frame citrus, dried fruits and a rich texture. The refill ex-bourbon barrel allows the distillery character to shine through in this seasonal sensation. The same flavour profile yields a completely different flavour experience with Cask No. 72.109 Orchestral manoeuvres in the cask. Maturation in both an Oloroso sherry butt and a heavily charred puncheon yields an astonishing combination of caramel, toffee, cabinet spices and vanilla-citrus desserts with brown breads, smoked meats and oaky notes…. a mouthful of fun!
